Description
A light, high-protein twist on classic cloud bread using cottage cheese. It’s soft, golden, and deliciously versatile.
Ingredients
3 large eggs, separated
1/4 cup smooth cottage cheese
1/4 tsp cream of tartar
Pinch of salt (optional)
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment.
2. Whip egg whites with cream of tartar until stiff peaks form.
3. In another bowl, blend yolks and cottage cheese until smooth.
4. Fold egg whites gently into the yolk-cheese mix using a spatula.
5. Spoon batter onto the parchment in 6–8 rounds.
6. Bake for 25–30 minutes until golden and springy.
7. Cool slightly before serving.
Notes
Use room temperature eggs for better volume.
Cottage cheese should be whipped or blended smooth.
Do not overmix to preserve fluffiness.
